The Art of Peruvian Cuisine and Gastronomy
78While talking about world cuisine, the things that hit our minds are Lebanese, Greek, Spanish, Japanese, Mexican, Thai, Indian, Chinese, Italian, and French cuisine, but we cannot leave behind other food cultures that are rich and varied and have an excellent potential to reach the World Culinary Reference Guide and same is the case of Peruvian cuisine. It is really interesting to note that this cuisine has been greatly influenced by the combination of Spanish, Japanese, Chinese, and African cuisine and is therefore a fusion of all these cuisines. The Peru’s cuisine owes much of its success to this great combination and ultimate fusion. The main features of the art of Peruvian cuisine and gastronomy are its presentation, unique taste of recipes, and mixture of a variety of ingredients in cooking. All these things combined together are making possible for this cuisine to be in the top 10 tasty cuisines in the world.
The Ceviche Peruvian Recipe
Interestingly, this famous Peruvian recipe tastes totally different in South America. In Peru, it is made from sour orange, fish, salt, garlic, lemon juice, pepper, and onions. All this is topped with corn, sweet potatoes, and lettuce. You may be surprised to know that this recipe has undergone enormous fusions.
Also, Tiger's Milk Glass (leche de tigre) is a
cheaper alternative, which includes fish, lemon juice, pepper, and pisco (a famous
brandy produced in Chile and Peru). It's also a famous home remedy against hangover.

Huancaina Recipe
This is a very simple recipe that belongs to the
beautiful Huanuco city in Peru. This city is very well known for the quality of
its cheeses. Huancaina fries are made with boiled potatoes drenched in cheese
sauce with addition of salt, milk, and yellow pepper garnished with boiled eggs
and olives.
Anticuchos Recipe
This is another famous Peruvian recipe and its main ingredient is beef heart that is marinated with herbs and beer and then grilled like spicy Indian kebabs. This dish is of African descent. According to Peruvian history, 30000 slaves came from Africa to work in the large cotton fields of Peru. At that time, the Spanish feudal lords discarded the viscera of animals and the African slaves used to take the beef heart and marinated and seasoned it heavily before grilling, so in this way, anticuchos recipe took birth and then became really popular in Peru.
Lomo Saltado Recipe
This recipe is of Chinese origin and is basically an oriental dish. In simple words, it can be called as Peruvian Beef and Potato Stir Fry. It is accompanied with onions, tomatoes, and fries. The Chinese who migrated to Peru combined their culinary customs with Peru’s cuisine.
Potato Skins
It is a potato dough, like a puree, which is filled with beef, olives, raisins, and boiled eggs.
Lima Style Sigh
This is a famous Peruvian dessert and is very popular in Peru. It is made from condensed and evaporated milk and egg yolks. The preparation of this recipe is very laborious, as the chef has to put everything to a simmer and stir it for 2 to 3 hours.
So at last I would say that Peruvian dishes have a huge variety and are very healthy at the same time. Undoubtedly, Peruvians have mastered the Art of Good Eating due to many types of fusions with different food cultures of the world and this has also led the Peruvian cuisine to become the greatest symbol of fusion cuisine in the world.

We still use a lot of beer in our meat untill today, especially when we do an open-fire barbeque. We call it a "Braai"
The tiger milk sounds interesting, but will first taste it from someone who knows how to make it, before I will tempt to do it on my own.

Hello Sonni, you have done an excellent job here. I originally come from Peru and grew up eating all the above dishes. Reading your hub has made me incredibly hungry, it reminds me old times when me mother used to cook us a Papa a la Huancaina followed by arroz con pollo... delicious!
Do you know something else? Now I live in France and the French can be very picky about what they eat; but whenever my mom comes to visit me and cooks her Peruvian specialities, my French friends just love it!

My mom's recipe for anticuchos does not include beer. She marinates the beef heart in vinegar, dried red chillies, cumin salt an pepper. They are delicious!
Don't tempt me Soni, I love Indian food. When I was living in Scotland I used to have lots of Indian food because the spices reminded me of my Peruvian food.

Yummy. Never had Peruvian food. Interesting story about the beef hearts. We used to grill it as a delicacy.
